CHOCOLATE CHIPS COOKIES


Ingredients:
· 250g butter, softened
· 150g white sugar
· 150g soft brown sugar (available at supermarkets)
· 1 tsp vanilla essence
· 1 egg
· 250g chocolate chips
· 50g chocolate chips, extra for decoration

Dry ingredients (sifted together)
· 350g plain flour
· 1 tsp bicarbonate of soda
· A pinch of salt


Tools: Oven, baking trays, electrical mixer, wooden spoon, tablespoon, airtight containers.

METHOD:


1. Preheat oven to 180°C. Lightly grease 2 baking trays.

2. With an electric mixer, beat butter, sugar, vanilla essence and egg until light and fluffy.

3. Add the sifted dry ingredients and continue to beat well.

4. Stir in chocolate chips with a wooden spoon and chill mixture in the fridge for 30 minutes.

5. Drop mixture by tablespoons onto the prepared baking trays. Flatten slightly to form 1.5cm thick moulds, making sure each mixture is 3cm apart. Sprinkle chocolate chips over and press lightly into the mixture.

6. Bake for 12 to 15 minutes. Cool cookies on a wire rack and keep in airtight containers.



TIPS: TO GVE THESE COOKIES EXTRA CRUNCH, TRY ADDING NUTS, LIKE MACADAMIA, TOGETHER WITH THE CHOCOLATE CHIPS.
