VANILLA PANCAKES WITH BERRIES



Ingredients:
· 1 cup self-raising flour
· ¼ tsp baking powder
· 1 cup berry yoghurt
· 1 egg
· ½ tsp mixed spice
· 1 tbsp cooking oil
· Fresh mixed berries and maple syrup to serve

Instructions:
1. Sift flour and baking powder together in a large bowl. Make a well in the centre.
2. Whisk together yoghurt, egg and spice in another bowl. Pour into the centre of the flour mixture and mix until well-combined. The batter should be slightly lumpy.
3. Heat a large, non-stick frying pan over medium fire. Lighly spray with oil or drizzle 1 tsp oil over. Spoon tbsps of batter in batches of 4 into the pan.
4. Cook for 1 to 2 mins or until bubbles appear on the surface of the pancakes. Turn and cook for a further 1 to 2 mins or until golden and cooked through. Transfer to a plate and keep warm.
5. Serve pankaces warm, topped with berries and drizzed with maple syrup.


Makes 16 pancakes.
